Carotenoids are yellow, orange, and red pigments synthesized by plants. The most common carotenoids in North American diets are alpha-carotene, beta-carotene, beta-cryptoxanthin, lutein, zeaxanthin, and lycopene.

The are more than 600 different types of carotenoid many important to human health including Alpha-carotene, beta-carotene, beta-cryptoxanthin, lutein, zeaxanthin, and lycopene. We can get proper amounts of carotenoid by including brightly colored fruits and vegetables in our daily diet.  Interestingly,  we have to include a little fat in a meal to help the body absorb these important nutrients.
