Servers 4This salad is a great summertime dish that is both refreshing and delicious. 1 6-oz. bag Fresh Express® Baby Spinach 2 oz. slab bacon, cut into 1/2 cubes 1 hard-boiled egg, chopped 2 oz. chicken breast 1 Tbsp. olive oil Salt and pepper to taste Your favorite Balsamic Vinaigrette dressing Directions 1. In medium skillet, cook chicken in olive oil until brown. Remove from skillet and cut into 1/2 strips. 2. Add bacon to skillet and cook over medium heat for 2 minutes, or until crisp. 3. Reduce heat to low and add dressing to bacon; cook, stirring for 30 seconds. 4. Empty Fresh Express® Baby Spinach into large salad bowl. Pour dressing over the Baby Spinach; toss well. Add chicken strips and chopped egg. Serve immediately. |
