We have been absolutely besieged by SuperFoodsRx fans looking for healthy recipes that feature the SuperFoods. Both of our previous books included terrific recipes created by accomplished chefs. Anyone who has ever roasted a vegetable knows that sometimes a recipe need have no more than two ingredients to be fabulous.

Baby Cobb Salad

Baby Cobb Salad Servers 4

This salad is a great summertime dish that is both refreshing and delicious.
1 6-oz. bag Fresh Express® Baby Spinach
2 oz. slab bacon, cut into 1/2 cubes
1 hard-boiled egg, chopped
2 oz. chicken breast
1 Tbsp. olive oil
Salt and pepper to taste
Your favorite Balsamic Vinaigrette dressing


Directions

1. In medium skillet, cook chicken in olive oil until brown. Remove from skillet and cut into 1/2 strips.
2. Add bacon to skillet and cook over medium heat for 2 minutes, or until crisp.
3. Reduce heat to low and add dressing to bacon; cook, stirring for 30 seconds.
4. Empty Fresh Express® Baby Spinach into large salad bowl. Pour dressing over the Baby Spinach; toss well. Add chicken strips and chopped egg. Serve immediately.
